The word protein is derived from the Greek and means “of first importance”. Why? Seventy-five percent of the body's tissues are made from protein. When you eat protein, the body breaks it down in the stomach into amino acids which are later recombined to form body protein. The quality of a protein supplement is measured by its Protein Efficiency Ratio (PER). The PER shows the ratio between the eight essential amino acids which the body cannot make on its own but must obtain from food. Egg protein has the highest PER (100) and is the standard against which other proteins are measured.
